Ingredients for Jujubes
Sugar Water Liquid Glucose or Corn Syrup Agar Agar Powder or Gelatin Lemon Juice Food Colouring (yellow, red, green) Essence - Raspberry, Strawberry and Pineapple

Jujubes Preparation
Take gelatin or china grass in a bowl, add in ½ cup of water and mix well. Set aside for 10 mins. In a heavy bottom pan, take sugar, ½ cup of water, glucose and mix well. Put it on heat and cook on low heat till the sugar melts. Bring it to a boil. Boil the syrup until it reaches the hard ball stage (125°C) or you can check this by using a clean spoon when the syrup is dropped into cold water it may be formed into a hard ball. Now add in lemon juice and mix well. Boil it well. Now add in gelatin,mix and stir till it is melted. Divide this into three bowls and food colour and essence. Now pour it in greased bowls and let it dry outside overnight. Now cut into small pieces, and roll it in sugar. Store in an air tight container in fridge..
