Version 2: Restaurant Style Sambar Rice 

This version of sambar rice is restaurant style in which rice and dal is cooked separately and special sambar powder is added for taste.

One pot meal are always a life saver. Because you don’t have to baby sit near the stove in cooking rice separately, masala for the rice separately, layering them and cooking them together. Just throw everything in a pressure cooker or a pot and they will take care of themselves.

About Sambar Rice Recipe

Specially this sambar sadam is my absolute favourite, because it is loaded with lots of veggies, cooked till they are mushy and they just melt in your mouth. You don’t need heavy accompaniment with this too. Just serve it with fried papad and pickle and you are in business. I hope you will try this out and let me know what you think. Pin

How to Make Sambar Rice Recipe

Prepare Ingredients

Wash rice and dal well in lots of water. Wash and chop vegetables.

Seasoning for Sambar Rice

Heat oil in a pressure cooker, add in the tempering ingredients and saute for a min. Now add in onions, tomatoes and toss well. Cook them for 5 mins. Add in salt, sugar and all the spice powders and saute them for a min. Now add in all the veggies and toss well with the masala. Cook them for 5 to 10 mins till the raw smell leaves from them.

Cooking Sambar Rice

Pour in water. Add in dal, rice and tamarind extract. Bring this to a boil and cover the pressure cooker. Pressure cook for 5 whistle and simmer for 15 mins. Now switch off the flame and let them steam escape all by itself.

Serving Sambar Rice

Drizzle in some ghee and mix well. Serve with papad and pickle.

Ingredients for Sambar Rice

Rice - 1 Toor Dal / Tuvaram Paruppu - ½ cupSmall Onion (shallots) - 10Tomato - 2 choppedCarrot - 1 choppedRaw Banana / Raw Plantain / Vazhakai- 1 peeled and choppedBrinjal - 1 choppedLadysfinger / Okra - 4 choppedPotato - 1 peeled and choppedTurmeric powder 1 tspTamarind Pulp 3 tbspWater - 41/2 cupGhee - 1 tblspn to drizzle in the last

For Tempering

Oil - ÂĽ cupMustard Seeds / Kaduku - 1 tspCumin Seeds / Jeerakam - 1 tspFenugreek Seeds / Methi / Vendayam - 1 tspDry Red Chilli - 3Curry leaves - a handful

To Roast & Powder:

Cumin seeds - 1 tspBlack pepper - 1 tspCoriander seeds- 2 tbspDry Red Chilli 8Desiccated Coconut - ½ cupTurmeric Powder - 1 tsp

How to Make Sambar Rice

Wash rice and dal well in lots of water. Take it in a pressure cooker. Add water and cook for 3 whistle. Set aside.Heat a pan. add in the roasting ingredients one by one and toast till golden. Remove to a blender and powder it. Heat oil in a big kadai or any pot. Add seasoning ingredients. Now add in onions, tomatoes and toss well. Cook them for 5 mins. Add in turmeric powder and mix well. Season with salt, saute them for a min.Now add in all the veggies and toss well with the masala. Cook them for 5 to 10 mins till the raw smell leaves from them. Pour in water. tamarind extract. Cook till veggies are cooked. Add in the powdered sambar masala. mix well. Add in cooked rice and dal. Mix well.Drizzle in some ghee and mix well. Serve with papad and pickle.
