Plain Flour

All purpose flour | maida is used in making the dough. Plain flour is mixed with ghee to create the texture of the outer shell. Whole wheat flour can be used as a healthy alternative.

Ghee

Ghee is mixed with the flour to create a shortening of the dough which makes the outer layer flaky. If you want the sweet to be rich, you can fry the sweet in ghee.

Expert Tips

Make sure you use ghee or butter when making the dough. It creates a short-crust pastry texture to the dough which infact helps with the flaky texture of the sweet when frying. Chill the dough for minimum of 30 minutes for easy rolling. Don’t over fill the sweet, else it may leach out when frying. If you are using unsweetened khoya, add ¼ cup of sugar in the filling. Fry it on low heat. If you fry on high heat it will get dark colour when frying but the sweet will not be cooked properly.
