After the success of my Blueberry Mojito, I was super chuffed and tried another version- this time with watermelon and mint. And guess what? It turned out great, too. I am now ready for the summer with a few delicious cocktail recipes in my repertoire. Bring on the party, I say!
About Watermelon Mojito
Made using fresh watermelon juice, mint leaves, sugar, lime juice, white rum, and club soda, Watermelon Mint Mojito is a refreshing, fun cocktail that is a breeze to make using a few simple ingredients. It is a fun take on the classic Mojito recipe. It has the perfect sweetness from watermelon, tanginess from lime, and the fizz from the club soda. This ideal summer cocktail is for Sunday brunches, potlucks, patio nights, or lazy summer afternoons by the pool. This tasty Watermelon Mojito recipe is so colorful and vibrant that no one can say no. Plus, when made at home, you can control the sugar used. If you want to make a non-alcoholic version for kids or people who don’t drink alcohol, skip adding the white rum and have a delicious mocktail ready. For an added twist, add other summer fruits, such as strawberries, raspberries, cucumbers, and cherries, to this cocktail. Mint Leaves – Fresh mint leaves add a refreshing flavor. For a change in flavor, replace them with basil leaves. Sugar – Adjust the sugar according to your taste. If the watermelon is very sweet, you can skip adding extra sugar. Sugar-free substitutes like stevia or monk fruit also work fine. You can also opt for natural sweeteners like honey, maple syrup, or agave nectar. At restaurants and bars, simple syrup is added to cocktails instead of sugar; it dissolves quickly in the drink. You can also make it and use it to make this recipe. Lime Juice – I highly recommend using freshly squeezed lime juice for the best flavor. Use bottled lime juice only if you have serious objections to not using freshly squeezed lime juice. You can replace the lime juice with lemon juice. White Rum – Traditionally, Mojitos are made using white rum (light rum), but you can replace it with silver rum, vodka, or tequila. Club Soda – Club soda adds that perfect amount of fizz. Make sure it is chilled. If you do not like fizz, you can use chilled plain or sparkling water instead. You can also replace soda water with Sprite, ginger beer, or ginger ale, but remember that they are very sweet, so do not add any extra sugar. For a taste change, soda water can be replaced with tonic water, pineapple juice, orange juice, or apple cider. Garnish the glass with a mint sprig, lime wedge, or a lime round. Add watermelon cubes to a large blender or food processor jar and blend until smooth. Don’t bother if the watermelon has a few seeds; we will strain the juice anyway. Strain the juice through a fine-mesh strainer in a bowl or a pitcher. Press with the back of a spoon to get maximum juice. Discard the pulp. Straining the juice gives a clear drink. Add 4 tablespoon granulated sugar and ½ cup freshly squeezed lime juice to the pitcher and stir until the sugar is dissolved. Stir in 8 fl oz (1 cup) white rum and watermelon juice. Take 4 tall glasses and add the following ingredients to each of them.
2-3 ice cubes 2 lime slices 2-3 mint leaves
Fill half the glass with the watermelon juice mixture, then top with club soda. Garnish with a watermelon slice and mint sprigs. Serve watermelon mojito immediately! Note: You can add a few frozen watermelon cubes to the glass. They will slowly melt and keep the drink cool for a long time. Please do not keep the muddled mint for long, as it may become bitter with time. This tasty Watermelon Mojito recipe can be made into an excellent mocktail (a non-alcoholic cocktail). Just leave out the rum and sip away.
